The Boy is the greatest Boy in the world. After a long-term relationship with someone who would literally only eat meat, bread, potatoes and cheese (I wish I were exaggerating) having someone to actually cook for is the greatest. And it doesn't hurt matters any that he eats like a racehorse and has repeatedly called my food a religious experience. He told me he saw the face of God in my Sweet Marie Chicken. I don't buy that, but it does wonders for my cooking confidence. Frankly, I think he's just happy to have something besides ramen in his stomach for a change.
But the first time I cooked fro him was probably the best. He'd spent the night for the first time and had been talking the night before about all the food he planned to go out and get the next day. I told him I'd make him french toast and bacon, and he told me not to bother. Because Nothing could ever compare to his grandmother's french toast, and it would just end up in a fight.
So I made the bastard French Toast, and now I have to make it at least once a week, or he's not happy.
Breakfast for Two
4 slices Nature's Own grain and nut bread, left out overnight
4 eggs
1/2 c. milk
1/4 t. ground nutmeg
1/2 t. connamon
liberal pinch of ground cloves
liberal pinch of allspice
1 T. white sugar
1 T. brown sugar
1 t. vanilla
Whisk it all together in a low dish that will easily fit the bread slices. You want your bread slightly stale, because that makes it soak up the liquid much better. dip both sides of the bread in the mixture, leaving it for about 15 seconds per side to soak. Transfer to a buttered frying pan at medium heat and cook until the bread becomes firm to the touch.
I generally serve it with powdered sugar or maple syrup, and since The Boy has been around so much lately, I also make coffee, tea, bacon, sausage, scrambled eggs, and fruit.
There are no such things as leftovers in my house anymore.

Here's Mine:
Flack's Awesome Nacho Casserole
1 large bag Corn chips
3 Cans Turkey Chili
1 square Cream Cheese
1 can diced chilles
1 can diced tomatos
3 bags shredded cheddar cheese
2 tablespoons of cumin
1 tablespoon salt
1 tablespoon pepper
1 table spoon crushed red pepper
4 tablespoons hot sauce
Sour cream
Guacamole
1)Take Chilli and Creamcheese and combine in Large mixing bowl. Stir vigourously. Put in Microwave for 1:30. Remove from Microwave and stir vigourously. Repeat until cream cheese and chilli is completely mixed.
2)Add salt, pepper, crushed red pepper, hot sauce and cumin and stir into mix.
3)Take large greased casserole dish and put one thick layer of Corn chips on the bottom. Layer the chilli/creamcheese mix on top. Layer on whole bag of shredded cheddar cheese on top of Chilli/Cream cheese mix. Repeat until you have 3 layers of chips, chilli and cheese.
4)Preheat oven to 450 F. Stick casserole in oven for 15-20 minutes or until top layer of cheese is bubbling and looks delicious.
5)Remove from oven. Top with diced tomatos, diced chilles, sour cream and guacamole.
6)Enjoy.
7)Take big old shit.
8)Feel awesome.

He already knows. He works nights, and was bored and I had to go to bed and couldn't stay up on the computer with him, so I sent him to BoredatWork. And he found Uber. And he found my stuff. And he laughs and laughs. Not in a nice way, either.
But I'm not too worried about anything, because I'm hardly ever here anymore, and he's too smart to fall in with you people.

I made it up, ubetidid, and The Boy named it. It's pretty easy, though
2 Chicken leg quarters, skin on
sweet red wine, enough to cover the legs
about a cup total of dried cranberries, blueberries, raisins and currants
3 T. honey
1 t. nutmeg
1 1/2 t. cinnamon
1 t. cloves
1 t. allspice
2 garlic cloves , smashed
the juice of 1 large orange
a pinch of salt
pretty liberal pepper
Put the legs, skin-side up, into a casserole dish. In a bowl, stir together the wine, juice, and spices. Push one garlic clove under the skin of each leg and pour the liquids over the chicken. It should cover the legs halfway up. Put the chicken in the fridge and let it marinate overnight.
When it's time to cook, preheat the oven to 350 degrees and put the dried fruit into the liquid around the chicken legs. Cook it for about 20 minutes, covered, basting every 5 minutes or so. After 20 minutes, brush the skin of the chicken with the honey and stop basting. Cook for another 20 minutes. With about 5 minutes to spare, empty out most of the liquid with a ladle or a turkeybaster and put it in a small saucepan. Heat it to a boil and whisk in about 1/2 t. of cornstarch to thicken. When the juices of the chicken run clear, it's ready to come out.
When I made it, I put it on rice and spooned the sauce over the top. I also made some almond asparagus. It was good.

Of course it's bachelor food. I've lived without roommates for close to 4 years now and been cooking for myself so I'll have leftovers for lunch or dinner the following day since 2000 when I got divorced.

Also, here's my RPM, because I'm too lazy to post for myself.
3 large boneless/skinless chicken breasts (fucking cannibal!)
1 can of Rotel (your choice, i use the mexican with lime)http://www.texmex.net/Products/foods.htm#RO*TEL
variable quantity of Herdez Salsa Casera (Medium) http://www.texmex.net/Products/salsas.htm#HER
2 cups of Jasmine rice (because Thai jasmine rice is the ONLY good white rice, to me)
Dump everything in a roasting pan.
Turn oven on to 400 F and cook until chicken is done, stirring occasionally and adding water so the rice doesn't dry out and get hard.
Eat.
